Supplies and ingredients will be provided for all classes except for American Cake Decorating I, II & Redux. See ACD Supply List following ACD class descriptions.

Class titles with an asterisk (*) denotes kid friendly classes (children under 12 allowed; however, children under 7 years old must be accompanied by a supervising adult who will also be a paying participant in the class).

American Cake Decorating I ~ Linda

Magic happens at Spun Sugar. This class guides you through cake decorating start to finish, from splitting and filling a cake to crumb coating and icing with borders, flowers, writing, and figure piping. See supply list below.

American Cake Decorating II ~ Linda $130

Take the magic further. Now that you've been initiated into the basics of cake decorating, it's time to up the ante with more advanced techniques. See supply list below.

ACD Redux ~ Linda
$90

Don't have time to do the 4 week ACD course? Here's a one day class that boils it all down to 7 hours. This accelerated class will take you through thr basics of splitting and filling to crumb coating and finishing; then onward to borders, writing and flower piping. Suitable for beginners, this is also ideal for anyone needing a quick brush-up on their decorating skills. See supply list below.

ACD Supply List: Tips # 3, 6, 18, 21, 48, 69, 101, 104, 133 & 352; 2 small couplers; #7 flower nail; a pair of small sharp scissors (eg. cuticle scissors); 10" or 12" pastry bag; parchment triangles; 10" or 12" disposable pastry bags; basic food colors; 6" straight metal spatula. Optional: turntable.

Ready made kits are available for $50; request a kit to be reserved for you when you enroll.

Gum Paste Modeling ~ Linda $90

Better than playing with Play-Doh cause you can eat it! But who would really dare bite into the beautiful creations you'll be crafting from this versatile sugar clay. Learn to mold and sculpt figures as well as create bas relief plaques to use as cake toppers and embellishments on your cakes.

NOTE: we're offering 2 different concentrations: one on modeling people and the other on modeling animals. The Animal Modeling would be a great adjunct to the Panoramic Sugar Egg class.

Gum Paste Flowers I ~ Linda $90

Flatter Mother Nature with sweet and sincere imitations... make gardenias, autumn leaves, calla lilies and mums. Learn how to handle this misunderstood sugar clay like a pro and use tricks of the trade to enhance your edible flora. All tools and supplies provided.

Working with Rolled Fondant ~ Linda $90

Experience the beauty and magic of a fondant covered cake. Learn to emboss, gild and quilt. Make swags and try your hand at brushed embroidery. In class, you'll be covering a cake dummy with fondant and turn it into a beautiful center piece for any occasion.

Rolled Fondant & Gum Paste Flowers ~ Linda $170

Just about everything you'll need to know to create a center piece cake in one weekend. An intense class with lots of short cuts plus you get lunch! Learn to work with the satiny smooth icing dough we call fondant and then switch gears to gum paste blooms to finish off the cake.

Topsy Turvy Cake ~ Richard
$120

Ready to get a little wacky? In this class you will create and take home a two-tier topsy turvy cake. Learn techniques to trim cakes that tilt both vertically and horizontally and construction techniques to stabilize the cake for presentation. You'll decorate your cakes in brightly colored fondant polka dots, diamonds and whimsical flowers. Experience not required for this class. You will be guided one step at a time the entire way.

Novelty Fondant Cakes ~ Richard

Ever wonder how those chefs on the Food Network Challenges create those wild and whacky cakes? Well, here's a chance to to get your hands sticky with some novelty fondant cakes that are sure to delight and impress. We'll take you through the steps to carve the cakes, cover them with fondant and create a cake that's fancier than you could've imagined yourself making. Whether it's a Clown Cake for a child's birthday or a Gift Wrapped Box for some special celebration, your creativity will get a work out!

Novelty Fondant Cake Demo ~ Julie

For those of you who've dreamed of getting a front row seat at one of those Food Network Cake Challenges, here's the next best thing: come attend a demo by Julie Durkee, a 2-time Food Network Challenge winner! Julie will be showing of her carving and creative decorating skills on a Mad Hatter Cake (sometimes also referred to as a Topsy-Turvy Cake) and a Purse & Hat Box Cake (hmm, sensing a theme here?)

Whimsical Cupcakes ~ Richard

Celebrate Spring with a sunflower cupcake. Maybe a bright clown cupcake or Cooke Monster will help chase those winter blues away. Come enjoy an easy lesson on letting your imagination bloom on a thousand cupcakes. Everyone leaves with a bunch of yummy cupcakes that will make you the most popular person at home and work.

Wedding Cake Demo ~ Linda $50

Gird yourself for the bridezilla you said "yes" to. We'll take you through the steps to assembling and decorating a wedding cake that will bring tears of joy without shedding tears of frustration. Tips on transporting and last minute repairs and touch ups will also help keep the panic attacks at bay.

A Layer Cake To Die For ~ Mitchell

Double your pleasure without doubling your efforts, learn to bake, assemble and decorate a pair of scrumptious layer cakes. The secrets to moist and delicious dessert that will impress your friends and family will be revealed from the Zen of the Lemon Drop Cake to the Tao of Dark Chocolate. At the end of the class, you'll take home a couple of a cakes in complimentary flavors.

Big things can come in little packages and cake is no different. You will learn the tricks and techniques to making moist and scrumptious morsels of cake; from chocolate to rainbow-vanilla and spice cupcakes. Next you'll whip up some decadent fillings and frostings to squeeze even more goodness into your cupcakes!

Explore the sweet mysteries of cheesecakes: white chocolate swirl, dark chocolate and raspberry. Learn to decorate these three classic cheesecakes with a Spun Sugar twist, one of which you'll be making from scratch.

Soufflés: Sweet & Savory ~ Richard

Soufflés never fail to bring delighted looks from your dinner guests. Learn how to prepare soufflé bases ahead of time and pop them in the oven at the last minute for easy and elegant entertaining. In this class, students will prepare both a Chocolate Soufflé with Chocolate Truffle Centers and an Herbed Goat Cheese Soufflé.

Learn how it's done in a microwave- easy, fast and not too messy. Make sheet molded candies and hand dipped chocolates. Learn how to temper dark, milk and white chocolate simply, without losing yours.

SPRING TIME FUN
celebrate the end of winter and the joy of life!




Panoramic Sugar Egg ~ Linda $75 / $30

Learn the secrets to creating these delightful sugar center pieces. Mold a giant 9" sugar egg and create you own idiosyncratic tableau inside with simple gum paste figures and royal icing pieces then decorate the egg with piped royal icing and royal icing flowers. These eggs become unique heirlooms that for last years (as long as the ants don't get them!).

NOTE: The Jumbo Egg session is more suited to young teens and adults and will cost $75, the Little Egg session is geared more to younger kids (8 - 12 years) who may attend unaccompanied and costs $30

Learn to bake a 3D egg-shaped cake in two halves, cover them in fondant and seam them together; then let your creativity flow with colorful designs and decorations that would put Fabergé to shame.

Have a blast cooking, baking and decorating in our kitchen. Prepare an entire feast everyday, from soups, pasta, breads, sidedishes and appetizers to dessert. Each day will be a different theme. Most items on the menu will have a vegetarian alternative for added versatility.
